Recipe: HIGH PROTEIN BREAD

daughter Michelle Cotter for passing it on.
This lovely Irish bread is high in protein and fibre,
and possibly the easiest bread you'll ever make. It's also super tasty! And
because it's high in both protein and fibre it fills you up. This bread mix is very
wet, which makes it even easier to mix.
This bread freezes well if you need it to last.
Otherwise it lasts three to four days.
Ingredients
- 200g Wholemeal flour
- 200g Plain flour
- 150g Oats
- 1 tsp Bicarbonate soda
- Large fist full of whatever seeds you like
- I also add a tsp of fennel seeds
- 1 egg
- 2 heaped tbsp of natural yogurt
- Enough milk to make liquid up to 600ml
Instructions
- Place dry ingredients in a bowl.
- Crack egg into a jug, add the yogurt and top up to 600ml with milk and beat.
- Add wet ingredients to the dry ingredients and mix. (note: this is a very wet mix)
- Transfer to a greased loaf tin.
- Bake for 30mins at 160c, then a further 30mins at 150c.
