Recipe: LOW CARB BANANA PANCAKES

I love pancakes! So, when I discovered I could make pancakes with no flour I was delighted!

I got this recipe from a TV programme. It was so simple I didn't even have to write it down! I've since added cinnamon to the recipe just to spice it up a little.

Ingredients
  • 2 eggs
  • 1 mashed banana
  • 1 tsp baking powder
  • Generous sprinkle of cinnamon
  • Spray oil for cooking

Instructions
  1. Pre-heat your frying on a medium heat with spray oil.
  2. Mash your banana. If your banana is a bit hard, microwave it for about 20 seconds to soften.
  3. Beat your eggs in a separate bowl
  4. Add the mashed bananas, baking powder and cinnamon and beat together
  5. Cook your pancakes. (make your pancakes small)
  6. Drizzle with maple syrup or your chosen topping and eat!
